Avocado Soup

   

A study recently published in the Journal of the American Heart Association claims that new research finds that eating an avocado per day, as part of an overall diet rich in healthy fats, may help cut the bad kind of cholesterol, known as LDL.
After running a study, the researchers found that the avocado inclusive diet led to significant reductions in LDL cholesterol compared to those who did not eat avocados. Penny Kris-Etherton, a nutrition scientist at Penn State and author of the study said “It's something in the avocado” other than just the fat composition. Here is a reason to enjoy avocados. There are so many ways to enjoy them. Guacamole is most common but they are good tossed in salads, made into salad dressing, in turkey sandwiches and just plain avocado sandwiches. Below is a favorite way to enjoy the smooth, delicate flavor.
                                                                                                                   

Avocado Soup

4 avocados
½ cup lemon juice
3 cups chicken broth
salt and pepper


Remove avocado from skin and remove pit. Place in a food processor or blender with remaining ingredients. Puree. Chill for a few hours before serving to develop the flavor. It will stay a lovely green because of the lemon. I love its smooth, delicate flavor but you can add garlic, salsa, chili sauce or nuts and seeds. It makes 7-8 cups of soup.
