Cucumber Blueberry Corn Salad

There is so much beautiful produce at the farm markets now.  I love to buy a bit of everything so salads are a good way to combine ingredients.  This salad has the fresh taste of summer.
Cucumber, Corn and Blueberry Salad
 
1 ½ cups corn removed from cob
2 cups blueberries
2 cups cucumber, peeled and seeded
½ cup onion
Dice cucumbers and add corn.  Sprinkle with ¼ teaspoon salt and allow to sit 20 minutes.  Drain and blot.
Add berries and onion  and top with dressing as follows.
 
Dressing
1/3 cup mint leaves
½ teaspoon salt
2 cloves garlic
1/3 cup balsamic vinegar
½ cup olive oil
Put mint leaves, vinegar and salt in food processor and run.  Drop garlic into running machine one clove at a time. Add oil slowly. Dressing is better after it sits for a while and the mint flavor develops.
