Easy Squash Soup

      

Easy Squash Soup
4 cups chicken broth
2 lb. box of diced butternut squash
1 tablespoon olive oil
1 onion, diced
½ cup coconut milk or other milk
1 teaspoon thyme
Salt to taste
Saute onion in olive oil until slightly browned and tender.  Add broth and squash. Boil about 10 minutes until tender. Add remaining ingredients and puree with blender stick.
