Summer Vegetable Sauté

         

The taste of fresh summer vegetables is intoxicating.  They need to be enjoyed in their abundance before the season is over.  This is a quick and delicious way to enjoy them.
                                                       
Fresh Summer Vegetable Sauté

2 ears of corn, removed from cob
½ sweet onion, sliced thin, vertically
2 cloves of garlic, minced
1 yellow bell pepper, diced
2 large tomatoes, diced
1 medium eggplant, diced
½ teaspoon dried marjoram
2 Tablespoons fresh basil, chopped fine
salt and pepper
2Tablespoons avocado oil or other oil of choice


Heat oil in the pan. Add garlic and onion, and let saute over med. high heat for a few minutes until starting to turn color.
Add peppers and eggplant and continue to cook, stirring occasionally for about 4 minutes. Add tomatoes, corn, seasoning and a few tablespoons of water if there is no liquid. You don't want it to burn dry. Stir all together and cover. Simmer 6-8 minutes until the vegetables are tender.
