Tomatoes and Watermelon

The farm markets are really busy as we approach autumn.  There is so much beautiful produce to buy.  I have been preserving a few things as we try to eat all the fresh bounty.  This week’s purchase was an entire watermelon.  I wanted to make watermelon pickles and the bonus is all the fruit inside.  Watermelon pickles are so easy to make especially if you refrigerate them instead of processing them.  I have dehydrated watermelon , and frozen it for sorbet but we like it fresh best. The following salad uses the best ingredients of the season. It may sound peculiar but is a great flavor combination.
 

Tomato Watermelon Salad
 
5 cups watermelon, seeded and cut into 1” cubes
2 1/2 cups tomatoes, cored and squeezed to remove excess seeds and pulp, then cut into 1” chunks. 
1 teaspoon sea salt
1/4 Tablespoons olive oil
2 Tablespoons champaigne vinegar
¼ cup  chopped fresh basil
1 cup crumbled feta cheese
Combine watermelon and tomatoes in a bowl.  Sprinkle with the salt and toss.  Allow to sit for 20 minutes and then drain.  Sprinkle with basil, combine the oil and vinegar, pour over the salad , add cheese and toss.
